Morocco is well knowned by its port city “casablanca”, fish and seafood is fresh and plentiful. Fish Tagine ; it’s so fragrant, lemony, vibrant, healthy and super easy to prepare; and if you don’t like fish, you well change your mind after trying this! Let’s start .

INGREDIENTS

  • 2 tablespoons olive oil.
  • 1 garlic clove, finely chopped.
  • 1 bunch coriander, finely chopped.
  • 2 tablespoons lemon juice .
  • 2 teaspoons paprika.
  • 1 teaspoons ground cumin.
  • salt to taste.
  • Pinch cayenne pepper, or more to taste (optional).
  • Generous pinch saffron .
  • 4 cod fillets or any type of white fish fillets.
  • 4 medium sized carrots, peeled and grated.
  • 2 large potatoes , peeled, grated and drained.
  • 3 bell peppers, seeded and chopped .
  • 1 large preserved lemon.
  • 1large tomatoe.

Instructions

  • Preheat oven to 200 C
  • Cover the fish fillets with 1/2 cup of chermoula (olive oil, garlic clove, finely chopped, bunch coriander, finely chopped, lemon juice, paprika, ground cumin.salt to taste.Pinch cayenne pepper, or more to taste and pinch saffron .
  • Place in the refrigerator for 30 minutes – 2 hours. The longer you allow it to sit the more flavorful the fish will be.
  • While you are waiting for the fish, begin to prepare the vegetables. Peel and cut the carrots into halves. Wash the tomato and slice into several thin slices, discard the top and stem. Wash and cut the top off of a green pepper. Scoop out the seed and cut it into thin slices.
  • Once the fish has marinated begin to prepare the tajine.
  • Start by layering the carrots in the bottom of the vessel (tagine).
  • Next add the fish, then the tomatoes, and finally the green peppers, and preserved lemon .
  • drop some extra olive oil and cover the tajine ; Place in the oven and bake for 12 to 17 min depending on the thickness of the fish fillets. 

*Serve it warm with bread and hot sauce or brown rice. 🙂
