Roasted eggplant is made by Moroccan spices , it’s a flavorful side dish to serve with main dish


Here’s what you need to make this roasted eggplant dish:

  • medium eggplants
  • olive oil
  • salt
  • pepper
  • paprika
  • cumin
  • fresh parsley, minced


  • Preheat your oven to 220 dgr. Chop the eggplant into cubes and put them into a baking sheet.
  • Toss with olive oil before sprinkling on spices .
  • Bake for 20 minutes until the cubes are golden brown .
  •  Mix the roasted eggplant with olive oil, and a sprinkle of parsley before serving. 🙂
