This salad is a Moroccan version of potato salad that includes carrots and rice .

Ingredients

  • 3 medium potatoes
  • 2 carrots
  • 2/4 cup of rice, rinsed
  • 1 tablespoon mayo
  • salt and pepper to taste
  • 1/2 tablespoon cumin

Instructions

  • Peel potatoes and carrots.  then Boil in water until tender ; they should still have a slight bite.
  • In a pan boil add 1 cup of water to 2/4c rice.  Cook until tender, adding more water if needed.  
  • The carrots will most likely be tender ahead of the potatoes.
  • Remove carrots and potatoes from water and put into cool water right away.  
  • Place them into a large bowl.
  • When rice is tender .  Add to bowl with carrots and potatoes.
  • Take one spoon of mayo and mix into the vegetables and rice. Stir softly , until they combined.
  • Sprinkle the 1/2 tsp cumin on top and mix to combine.  Do the same with salt and pepper.
  • Put it onto a serving plate and eat with a spoon ; serve cold 🙂
