Maakouda is a kind of Moroccan potato fritters. its can be eaten alone or as they are most often, made into a sandwich. . They can also be served as an appetizer or as a side. This version is well-seasoned with sauteed onions, garlic, cilantro, and cumin .

They are easy to make and are sure to please your family .

Ingredients

  • 1 Kg or potatoes
  • 1 small onion (finely chopped).
  • 1 to 2 tablespoons butter.
  • 3 or 4 cloves garlic .
  • 1 1/2 tablespoons cumin.
  • 2 teaspoons salt.
  • 1/2 teaspoon pepper (or more to taste).
  • 1/4 cup chopped cilantro.
  • 2 eggs (beaten).
  • Olive oil (for frying).
  • fryin pan.

Instructions

  1. Peel the potatoes and place in a pot. Cover with salted water and boil until soft, remove from heat and allow to cool. Mash.
  2. Add the onion ; spices and eggs, mixing well. 
  3. Begin to add the flour slowly, mixing while you go. The dough should be slightly sticky but should not stick to your hands. You may need to add more than the 1/2 cup of flour. 
  4. Begin making small balls with the potato mixture. The size is really up to you. 
  5. Flatten each ball and dust with flour. 
  6. Heat enough olive oil to generously cover the bottom of a skillet or griddle. Add the potato and cook slowly over medium heat, about 5 to 10 minutes per side, until deep golden brown. remove from oil and drain on a paper towel.
